Over the decades we had the opportunity to meticulously know and study every parcel of our vineyards. This has allowed us to identify single vineyards whose soil and climatic characteristics show a pronounced vocation for a specific grape variety.

Grapes harvested from these plots are destined to special selections, our Cru: low yields, manual harvest, meticulous and separated vinification, all aimed at encapsulating in the bottle the most precious sensory synthesis of our terroir. We have delimited a total of about 20 hectares that deserve special attention because the wine produced exclusively from the grapes here cultivated can offer, more and better than others, an authentic snapshot of its place and vintage. Thanks to the high level of craftsmanship and our personalized approach to each vineyard, Cru wines are produced in limited quantity, in order to ensure high quality and a particularly fine organoleptic profile.

The soil in Salice Salentino provides an ideal environment for varieties such as Negroamaro, Aglianico and Cabernet Sauvignon thanks to its clay loam texture. This type of soil is deep and rich in organic substance, providing a natural supply of nutrients for the vines. The clayey component helps retain moisture in the soil, ensuring adequate water supply during drought periods. This is particularly advantageous for vine cultivation because the roots can have continuous access to water and essential nutrients for growth. Clay also contributes to the soil composition, giving stability to the vines and facilitating a slow and uniform ripening of the grapes.

The soil in Veglie has a silty-loamy composition, with a significant advantage in terms of drainage. This is crucial for the cultivation of Primitivo grapes, because a good drainage prevents water stagnation around the roots, reducing the risk of root diseases and rot. The loamy component of the soil contributes to its porous texture, allowing the roots to breathe and extend freely in search of nutrients. This type of soil is favorable for producing high-quality grapes, as vines can grow optimally, ensuring uniform ripening and a balanced concentration of sugars and acidity in the bunches.
